Chocolate Oat Bran muffins

I attempted these muffins for the third time today and this was definitely the best rendition yet. The strawberry yogurt added a great fruity accent. As a lover of something sweet for breakfast, these muffins are exactly right for me. Perfect with a tall glass of skim milk. It meets the daily requirement of oat bran (if you eat all three in one day. . . or one sitting, like I do) while giving you a satisfying, lightly sweet treat. Great for breakfast (for those with a sweet tooth, like me) a snack or dessert. And they couldn't be easier to whip up.


Chocolate Oat Bran Muffins
3 tablespoons oat bran
1+ tablespoon cocoa powder
1/2 teaspoon baking powder
3 tablespoons strawberry (or other) flavored light yogurt
1 egg
few drops of vanilla aroma
1/4 teaspoon sweetener (to taste, and depending on the type of sweetener)

Preheat oven to 350 (180 Celcius). Combine dry ingredients in a small bowl. Add the wet ingredients except the sweetener and combine with a whisk until smooth. If you're not afraid of raw eggs, taste the batter and see if it needs some sweetener, add to taste. Pour into three muffin cups (lightly oiled or lined with papers). Bake 15-18 minutes. They will stick to the papers, but what can you do? :)
